THE HEALTHY BEAN SALAD


The New year is approaching fast, so I am changing my eating habits...This salad is very healthy and I do have to admit, the first bite I took of this salad wasn't that great, but it grows on you and now I love it!!!!

1 large can of black beans
2 cans of corn
1 red onion
2 red bell peppers
2 garlic cloves
1 pk organic Cilantro
1/3c olive oil
1/4c Lime juice...
Salt and pepper

Drain black beans and corn (do not cook)
Dice onion, bell peppers
Add olive oil and lime juice
Add salt and pepper
Mince garlic and Cilantro
Mix all together
Put left-overs in the refrigerator and it last for days!
There ya go A Healthy eat and a good way to get your veggies :)
